Believe it or not, oyster sauce is more readily available in Brazil than hoisin.

I am surprised that no one in the comments is mentioning this but the video doesn’t tell you the chicken stock powder/water ratio - I know you should be able to adjust to taste, but it would be nice to be given a starting point to experiment from. Even the written recipe linked in the description simply says “6 cups (1420 ml) chicken broth, (preferably from Asian chicken bouillon powder like Lee Kum Kee or Knorr)”. Again, how much powder to add to 6 cups of water? This is actually the issue that I have every time I need to use the asian chicken stock powder, because (at least the llk powder that I have) has no suggestions or instructions written on the can. It would’ve really helped if you gave some guidance.
because all the brands are different. you can find the amounts online. LKK = 3/4 tsp per cup. Knorr = 1 tsp per cup.
Thank you, and that’s exactly the kind of comment that would’ve been helpful, certainly in the video itself, but if not at least in the written recipe - different brands are different and you should be able to find the information online, but here’s the amounts to use for the brands that are being mentioned in this video. That said, that’s also exactly the thing. I did search online for the information, and found suggested ratio of 1t of LKK powder for 1 cup of water. So there we go right there, I wasn’t making it the way you intended. The outcome was still good. I used frozen dumplings instead of making the wonton from scratch. I can see myself making this again given how simple it is and experimenting with ingredients. Thank you.

for cast iron, it's best to season your pan before cooking *every single time* (you can use the same technique as they do for woks) that way the seasoning builds up continually, it'll be a lot less likely to strip

It’s long grain rice but a day old since fresh rice is to soft to make fry rice. Measure the Chinese way by putting the rice in and for the water you put your finger on top of the rice and add water till your first knuckle. In 60 years I’ve never measured the rice or water and made perfect rice every time.
It will feel more “takeout” if there’s a single blanched baby bok choy or Shanghai bok choy😂
Try this slight adjustment. Cook chicken at 80%. Take it out. Toss garlic into wok, stir, then eggs, stir, and then rice. The rest is like the video.
Does it have to be 8tbsp of butter? I was hoping to add this in as a healthy substitute for some of the higher calorie sauces in my life.
A well-researched video. Already did most of the recommended steps (I've been making fried rice for a few decades, you're gonna get overlap in what works!) but there were still a trick or two in there to try. Thanks for posting.
Remember, you have to cook the chicken in a pressure cooker with peanut oil.

The chicken sandwich at Chick-fil-A uses the exact same chicken patty as McDonald's uses for the McCrispy chicken sandwich. The chicken is identical.

This is one of the best videos ever! 1) So much info, 2) Clearly well researched…he put an insane amount of time and effort and worked with multiple sources to provide accurate information, 3) Specific recipes. One of my greatest pet peeves…knock off recipes with optional ingredients…if something is a knock off, there should be no optional ingredients because it’s a specific recipe. If I know don’t like something, the onus is on me to make adjustments. 4) As a random bonus, the “authentic experience” moment near the end was hilarious! Thank you so much!

As a pickle lover, I can't stand the fact that these places limit you to 1 or 2 pickles. When I make these at home, I fill them with pickles, and it's so much better.
Juts cook rice in a pressure cooker with two whistle blows, and then let it cool inside the pressure itself slowly, the ratio you provided was also good, 1 glass/cup rice uses 1.5 glass/cup with same glass/cup of water, works almost fine, generally big grain size is used for fried rice, juts come to India and you will understand..
